チキン胸肉チャーシュー Brazed chicken breast

 昨日買ってきた若鳥胸肉1kgでチャーシューとジャーキーを作ることにしました。うちの近所のア〇レでこれが安く買えるので大変助かっています。使うのは愛用している18cmの鉄鍋。

1kg of chicken breast

３切れ入っているうち、大きな２個をチャーシューに利用。後の小さな１個はジャーキー用。

Leave the smallest piece to make chicken jerky.

まずは、肉の外側を焼いて締まりをつけます（省略可能な作業）。

Stir-fry the meat in order to harden the surface (entirely optional).

加熱が終わったらアイスピックでグサグサ。その前に皮は取り除いておくべきでした。

Poke with ice pick (I should have removed the skin first).

皮を取り除いたら、煮崩れ防止にタコ糸で縛ります。

さっきの鍋で濃いスープを作り、沸騰までもっていきます。

Make strong soup and bring to the boil.

沸騰したスープの中に鳥胸肉を入れて、火を消します。

Place the meat and turn off the fire.

フタをして冷めるまで放置。スロークッキングでじわじわと味がしみ込みます。ブタのショルダーなど、肉の塊が大きい場合は、冷めたところで肉を裏返しにしてもう一度加熱・放置します。

Place the lid and leave until cool.

冷めたら取り出し。スロークッキングなので、肉の縮み具合が抑えられます。

鍋のスープのほんの一部を残して他は別の容器に移す（スープは他でも利用できるので捨てない）。好みの味付けにソースなどでとろみをつけて強火で加熱すると出来上がり。

十分火が通っています。お肉の種類によってはスープで加熱の時間を短縮して、赤味が残るようにします。夕方散歩から帰ってからタイガといただきます。

ラップの上から綿棒で叩いてさらに薄くする。

100℃の低温で延々と乾燥させます。今現在、夕方の7時過ぎなので、記事ＵＰには間に合いませんでした。

公園で At the park

 今朝の散歩は暑すぎて、城北中央公園までは行けませんでした。少し手前の「柿の木広場」。ここに着く前に通った近所の屋敷林は樹木がうっそうとして影ばかりなので涼しかったのに、そこからここまではずっと日向の道です。なので、タイガはもうゼイゼイ。

Another boiling hot day.  Regardless of the public warning to stay at home, we headed towards the Persimmon Park.

恨めしいほどの良い天気です。

Dangerously hot weather.

まだ大の用を済ませていないタイガですが、もう十分という顔をしていました。

Taiga indicated to me that she had enough, but she had not done her 'morning business'.

柿の木広場を出る前に、百目の生り具合をチェック。相当年季の入った木なので、隔年性はほとんど無く豊産性です。これで完全甘柿なら良かったのですが。

Persimmon - a variety called 'Hyakume'.  This variety is prolific but, unfortunately, partly astringent.

コナラの実が色づき始めています。これが真っ黒になるとハトなどの野鳥が食べに来ます。城北中央公園の木に着いているプレートの説明書きには「黒く熟すと餡子のように甘くなるので、昔は食用にされていた」みたいなことがあったので、去年初めて１個試してみましたが、ウゥ～ン、な味でした。

道を渡って茂呂山公園に上りました。苔むした地面とモミジの林です。

We went up the Moroyama Park across the road, where we could get shades under Japanese maple trees.

地面に落ちている白いものは、近づいてみるとサルスベリの花でした。

ズームで見ると、いかにも夏の風景。

振り返ると、タイガが勝手に奥のほうへ行って用足しをしていました。

Taiga had gone into the deep end of the maple woods to carry out her business.

目的を果たしたので、もういつでも帰っていいですが、日陰で小休止。

Since she was done, we could head home any moment but decided to rest in the shade for a while.

暑くて、いつものオヤジ座りがさらに崩れていました。

Finding it too hot, Taiga cannot sit upright.

このあと極力日陰伝いに帰り道をテクテク。

We came home picking the shady spots.

ラズベリーの枝折れ Raspberry cane snaps

 ラズのジョーン・スクワイアは枝が華奢なので、こまめに支柱に括り付けないと、こういうこと↓になります。この枝は太いほうだったので２か所で括り付けただけでしたが、その先がさらに伸びて実の房ができたため、２、３日前の雷雨のときに折れたようです。

枝の先にはまだまだ青い夏果がついていて、これからという時期です。

Most of the berries are still green.

株のエネルギーを節約させるために切り捨てようか、迷います。折れた部分が地上数十センチの高さなので、今切断すれば脇枝が伸びてきて秋果が着くと思います。地植えのラズは結構強いです。

The cane snapped at more than 50cm above the ground.  If I remove the broken part, I can expect new branches to come out which will produce autumn fruits.

でも、この暑い時期はアイスクリームなどの用途がいくらでもあるので、夏果を選択ました。ほとんど皮ひとつで養分が供給されているような状態ですが、即効性のある液肥で何とか完熟を目指します。

But I opted for the existing summer fruit, as I could use them for many purposes in this hot weather.

取り敢えず、色づいているものを収穫。オセージが２個、今年最後の実で小さいけど有難い。

去年、３個の初成りだった大実ユズ。鉢植えだったので収穫後に鬼剪定して苗全体を小さくしたら、今年はほとんど花が着きませんでした。でも、何とか３個が生っています。

After last year's fruiting, I cut down the tree to half the orisinal size.  As a result, the tree hardly flowered this year.

果樹園芸を始めた当初、香酸類の苗選びで本柚子とリスボンレモンは除外して真新しいものばかり選んでいましたが、今ではこの２種類が私のなかで最高の位置づけになっています。

公園で At the park

 昨日までの2日間は午後に激しい雷雨があってタイガのシャンプーを見合わせていましたが、今日はその心配がなくて3時過ぎにタイガを洗ったあと、自然乾燥のために公園へ向かいました。

まずは近所の屋敷林を通り抜けます。

After shampooing Taiga in the afternoon, I took her out to get her dry naturally.

柿の木広場を走り回ったあとは、道を挟んで向かいの茂呂山公園へ上りました。ベンチでお決まりのオヤツの休憩。

Went up to the top of Moroyama Park where there was Taiga's favourite bench for a treat.

その後は城北公園へ。ドッグラン近くの林に来ましたが、タイガが乾いていないのでランには寄りません。ランの地面は砂地なので、「濡れ手に粟」状態になります。

Arrived at Johoku Park, and resting in the cool woodland.

道を渡った草地に着くと、初めて見る子犬がいました。

Moved to the field across the road, where we ran into a new face.

生後4か月の豆柴で、名前は「ボー」君。ひっきりなしにはしゃいでいて、写真が撮れません。

ワンコを見ても人を見ても嬉しくて、嬉しくて、じっとしていられない様子ですが、一切声を出さずに走り回っています。子犬は生後４か月頃から恐怖心・警戒心が芽生えるそうですが、この子は天真爛漫でタイガの子供時代を思い出させます。

He is so excited to see anyone, dog or person, and cannot stay still.

ほんの一瞬だけ、お座りのポーズをとってくれました。

タイガに対しても興味津々。

Beau is very curious.  His owner told me that he had been told off by other mature dogs for being too excited.

もう７歳になったタイガは、興奮したお子ちゃまには無関心です。

Taiga, at 7 years old, is not interested in an over-excited puppy, but never scolds him.

ボー君には2歳未満の遊び相手が合いそうなので、この草地には毎夕方、数頭の幼い柴犬が集まることを飼い主さんに話しました。どの子もフレンドリーなので、上手く仲間入りできるでしょう。

Since Beau seems in need of playmates under 2 years old, I told the owner about the meeting in this field every evening, when several Shiba Inus gather, all of them less than 2 years old.

Hope you will make friends with lots of them.

草地を出たところにあるベンチで再度オヤツタイム。顔をアップで見ると、ほんの少しだけ年齢を感じます。犬は年を取ると目の空きかたが丸っこくなると個人的に思いますが、ときどきそれをタイガの顔を見て実感するようになりました。

でも、これまで何の病気や疾患もなく過ごしてきたので、飼い主に心配を掛けない子です。

まったりしていたら、大きなラブラドールがやって来ました。もうすぐ７歳になるギル君だそうです。

A white Labrador approached us.  Male, 7 years old, named Gil (short for Gilbert?).

静かに挨拶できました。

Being of the same age and temperament, they greeted calmly.

お互い笑顔でリラックスしています。

Both relaxed and smiling, an ideal way to introduce one another.

帰り道。

向こうからやって来た初めて見る黒柴の、いかにも男の子。3歳のリク君。他所の犬が怖いそうで、2,3秒後には唸り始めましたが、

Another new face, 3-year old male Shiba Inu, named Riku.  Riku is scared of other dogs and growled a few seconds after meeting Taiga.

タイガが一貫してリラックスしていたので、リク君も安心したようです。

As Taiga was relaxed all the time, Riku started to smile.
