A friend of mine gave me these Chinese quince fruits. There are not many ways to use them: either keep them in alcohol for a few months to make fruit drinks or turn them into jam. I am a teetotaller, so jam is the only option.
I do not like that distinct smell. So, even though the seeds are rich in natural pectin, I threw them away, in order to minimise the smell in the finished product.
I also removed the hard skin surrounding the seeds - now I am left with only the flesh.
Having thoroughly cleaned the fruits, the net weight came to 979g - write it down so as to decide how much sugar to use later.
Having diced the fruits to ensure fast cooking, I added some water.
At the same time, boil the roselle seed capsules that had been preserved in the freezer, in order to extract pectin.
The pectin is ready to be added to the quince stew.
The flesh was soft enough, but I used the potato musher to be thorough. I added sugar, equivalent to 50% of the net weight of the flesh. As the stew became thick, I tasted it. It was sweet enough with 50% sugar. However, the texture was grainy, just like apple jams.
To make it smooth, I added 1 tablespoon of gelatin (suitably bloomed). This was a big mistake! The colour of the jam turned from the orangey yellow with a transparent look tuned into a cloudy, creamy colour. It did not look edible!
Since I had come thus far, I felt compelled to put the jam into sterilised containers. I boiled the jam in the glass jars for 30 minutes for preservation. However, I felt uneasy about the colour of the jam, so I asked the AI on ChatGPT. I warned the AI that I had absolutely no knowledge of food chemistry. The answer/advice was thorough and thoughtful. I was really impressed. The upshot of it all is that the jam is safe to be consumed (though it may not look delectable).
